Ingredients
  • 4 Eggs
  • 400 grams Sugar ((500ml))
  • 10 milliliters Vanilla
  • 250 milliliters Sunflower Oil ((250ml))
  • 320 grams Cake Flour
  • 80 grams Cocoa ((160ml))
  • 15 milliliters Baking Powder
  • 2,5 milliliters Salt
  • 250 milliliters Buttermilk
  • Chocolate Buttercream:
  • 300 grams Butter
  • 480 grams Icing Sugar
  • 10 milliliters Vanilla Essence
  • 2,5 milliliters Salt
  • 60 grams Cocoa
  • 30 milliliters Full Fat Milk
  • Ganache Topping:
  • 160 grams Dark Chocolate Bits
  • 80 milliliters Double (Full Fat Cream)
Instructions
  1. Preheat oven to 160°C and grease 2 x 9" (23cm) OR 2 x 8" (20cm) cake rounds with non-stick spray.
  2. Beat the eggs, sugar, and vanilla until light in color and fluffy.
  3. Gradually add the oil while beating at a slow speed.
  4. In a separate mixing bowl sieve the cake flour, cocoa, baking powder, and salt together and keep aside.
  5. Carefully fold the flour mixture alternating with the buttermilk to the beaten eggs.
  6. Pour into prepared pans and bake 30 - 35 minutes.
  7. Invert onto wire racks and allow to cool.
  8. Buttercream:
  9. In the bowl of a stand mixer fitted with the beater attachment, cream the butter and half of the icing sugar until smooth and slightly fluffy.
  10. Stop mixing and add vanilla, salt, and cocoa.
  11. Resume mixing on low speed to combine, mixing until the chocolate leaves no streaks.
  12. Add the remaining powdered sugar, half a cup at a time.
  13. Slowly add the milk until the desired, spreadable consistency is reached.
  14. Ganche Topping:
  15. Place the chocolate and cream in a microwaveable bowl.
  16. Melt the mixture on high for about 2 minutes, stirring every 30 seconds, and then bring to room temperature.
  17. Place the cake in the fridge for at least 30 minutes before pouring the ganache over the cake.
